Shane did his chef training 1994-95 in Perth, then started industry work at several small cafes before starting a two year stint at The Brass Monkey in Northbridge under Chef Nigel Seberry.

Shane embarked on an epic adventure in 1997, travelling through Hawaii, Canada and doing some relief work in England before moving to France as Head Chef of L’Office Cafe in Argentiere, Chamonix-Mont Blanc for a year. From there, he worked for several months on the Greek island of Santorini at the prestigious Selene Restaurant. After returning home in 1999 he travelled east to Cairns in Queensland, working aboard the Ocean Spirit catamaran feeding tourists going on day trips to snorkel on The Great Barrier Reef.
